What is the purpose of food additives?

Whether it is thickening agents in sauces, vitamins for soft drinks and sports drinks or flavour enhancers – without additives there would be no jam or ready to eat meals. In sweet items, such as biscuits for diabetics, which do not increase insulin levels or sugar-free chewing gum to prevent tooth decay, sweeteners are included. Even though they are reminiscent of the properties of sugar, they are metabolised in a very different way. What consumers appreciate with sausage and meat products are a natural colour, which we achieve using various additives.

What types of additives are used in food?

In food production, among other things, essential amino acids are added, as the human body needs them but cannot produce them itself. Flavours and essences as well as plant extracts serve as flavour enhancers or colouring agents and energy ingredients as boosters. Sweeteners and sugar substitutes are often used in dietary foods. Acid regulators and preservatives as well as vitamins and derivatives extend the shelf life of food among other benefits. The evaluation of additives is the responsibility of the EFSA at EU level and the United Nations JECFA globally.
